Negroni Week

Negroni week was launched by Imbibe Magazine in 2013 as a celebration of one of the world’s great cocktails and an effort to raise money for charities around the world. 

 

This year all charities are providing support and assistance to hospitality workers affected by the global pandemic. The Australian charity associated with Negroni Week is HelpOutHospo

Our very talented Owner/Sommelier, David Wickwar, has curated some delicious combinations to celebrate this world-renowned week.

BARREL-AGED NEGRONI

Here we pay homage to arguably the greatest of all cocktails, created in Florence back in 1919 by bartender Fosco Scarselli.

The story goes that Count Camillo Negroni wanted Fosco to make him an aperitivo with a bit more punch than the Americano cocktailshe usually drank.

So out went the soda, in came the Gin and the rest is history.  We’ve added another layer of complexity to this classic cocktail with some time spent in barrel. Enjoy!

 

Campari, Ounce ‘Bold’ Gin, Martini Rosso, oak, orange

 

Store in the fridge; to serve, shake gently and pour into a Whiskey tumbler over a large ice cube, garnish with an orange wheel.

VIA MARIS

'Via Maris' is an ancient phrase, that translated means 'the way of the ocean'.It refers Venice's history as the gateway to Europe for the import and trading of exotic fruits and spices. For hundreds of years Venice controlled these trade routes and built enormous wealth, power and opulence from them. This drinks draws on this history with the use of a coconut and lemon spiked Gin and spices from the coast of Africa. We think the wealthy Venetians of the time would have approved.

 

Malfi 'con limone' Gin, Rosso Vermouth, Campari, Coconut, North African bitters

 

Store in the fridge; to serve, shake gently and pour into a Whiskey tumbler over a large ice cube. Garnish with a dehydrated coconut and a lemon wheel.

 

VENETIAN NEGRONI

Have you ever heard of 'Select'? Fortunately, we have! Select' is a quintessentially Venetian aperitivo that has been one of the  favourite tipples of the city since the early 1900’s. It's heavily spiced and just a touch sweeter than some. We combine it here with top-notch local gin and boutique Italian vermouth to produce a softly edged, super-smooth Negroni. Be warned these are highly addictive!

 

Select Aperitivo, Four Pillars 'Spiced' Gin, Oscar '697' Vermouth

 

Store in the fridge; to serve shake bottle gently and pour into a chilled coupette or martini glass. Garnish with a dehydrated orange wedge and fresh thyme.

The Pickering

Created to honour the Whiskey drinking, cigar smoking Yank, Harry Pickering. Down on his luck in 1920's Venice, Pickering befriends local bartender Giuseppe Cipriani who agrees to lend him the money he needs to return home to Boston. Years later he returns to Venice and repays Cipriani threefold on the condition that he opens a bar with the money, so the legendary ‘Harry’s Bar’ is born!

 

Ingredients: Wild Turkey Rye, sweet & dry Vermouth, Morello Cherry liqueur,

hickory & apricot bitters, smoke

 

Store in the fridge; to serve, shake gently and pour into a Whiskey tumbler over a large ice cube, garnish with 2 cherries on a skewer

The Secret Garden

Venice is a city famous for many things; stunning Architecture, culture and a rich history, to name a few.  This vibrant and floral drink is inspired by one of the city’s lesser known beauties; the many breath-taking gardens that lay hidden throughout it’s labyrinth of alleyways and canals. These gardens are only able to be viewed on very rare occasions and are yet another part to the magic that is Venice.

 

Ingredients: Limoncello, Grappa, Crème de Violette, Elderflower, citrus, sugar

 

Store in the fridge; to serve pour out a small amount into a chilled champagne saucer or martini glass. Re-seal, shake bottle vigorously, pour the remainder of your drink and garnish with a lemon wheel to finish.

Store in the fridge; to serve shake bottle vigorously and pour into a chilled martini glass. Garnish with a thin slice of green apple.

NEW: SALT MERCHANT -

Salt Merchant... Historically, a vast majority of Venice's great wealth was built off the back of trading salt, a commodity that carried a great value in years gone by. This historical value is the origin of 'the word 'salary' from the Italian 'sale' and the phrase

"He's worth his weight in salt". Dock workers in Venice at the time were paid in

large bags of salt. This complex and decadent drink; evokes the flavours of the lagoon and pays tribute to these wealthy and influential merchants.

 

Bowmore No 1 malt Whiskey, Amaro Averna, Pedro Ximenez Sherry and salt

 

Store in the fridge; to serve shake bottle gently and pour into a salt rimmed Whiskey tumbler over

a large ice cube.

Giulietta

Everybody wants to find their Romeo or discover their one true love! Like love itself, this drink is bitter-sweet and playful twist on the classic gin martini that will warm your heart and make you feel like love is 

in the air. We've combined a uniquely spiced local gin with Campari and notes of orange to deliver a firm flavoured drink that is elegant, timeless and like Giulietta herself, will steal your heart away. 

 

Ounce ‘Bold’ Gin, Campari, Dry Curacao, house Negroni bitters

 

Place in the freezer 20 minutes before serving; to serve, shake gently and pour into a chilled martini glass. Garnish with a slice of ruby grapefruit.
