OUTDOOR DINING PROPOSAL

Vaporetto Bar & Eatery is proposing an outdoor dining extension of their venue to coincide with the Victorian Governments new announcements regarding opening up COVID - Safe outdoor dining for restaurants in Melbourne on October 26th 2020. 

 

We are proposing to use the "Green" outlined outdoor dining space for the foreseeable future based on the Victorian Governments COVID trading restrictions (see Google Earth image below).

Once "Outdoor Dining" is available to diners, our Delivery & Takeaway business will all but disappear. We have managed to survive all of the other challenges we have faced this year, however we can't survive this.

 

The space we are proposing involves closing off a section of Grace Street, which lies directly in front of our front doors as well as a cordoned off section of the carpark directly in front of our store front.  This enclosed dining space, which includes the semi-closed off Grace Street, will safely and securely allow us to trade outdoors and will ensure customer & staff safety from the rest of the carpark.    

 

We propose to have a dining space that allows for the following permanent fixtures: a white marquee to partially protect the space from the elements, bistro lights/fairy lights to lend light to the space during the evenings, synthetic grass laid inside the enclosed space and white picket fencing around the perimeter of the space which will also serve to conceal the water barriers.  See a very similar set-up below...

We propose to rent/purchase commercial outdoor dining furniture which includes: outdoor tables, chairs, bistro umbrellas, commercial heaters, plants/greenery, and a waiter’s station on wheels; all of which can be brought indoors and locked securely in the venue during non-trading business hours.  As stated above, we would like to keep the semi-permanent fixtures such as the commercial marquee, synthetic grass, council-provided barriers, street signage, etc outside during non-trading hours.

 

We are asking for the following trading hours:

 

  • 7 days a week

  • 12pm – 10pm 

 

We are initially planning on trading in this outdoor dining space:

 

  • Monday – Thursday: 5pm – 10pm

  • Friday – Sunday: 12pm – 10pm

 

 

Our proposal will coincide with the government’s COVID-19 Safe social distancing plans and procedures:

 

  1. The outdoor dining area will be 100% table service only.

  2. All food and drinks will be prepared inside the venue and staff will deliver the items to our outdoor dining customers.

  3. Will follow the government’s rule of 1 guest per 4sqm or 1 guest per 2sqm; this is contingent upon the upcoming announcement of requirements for restaurants to open on October 26th 2020.

  4. All dining tables will be spaced 1.5m apart. 

  5. We will adhere to the government’s strict sanitising and cleaning procedures.

  6. We will continue to update our COVID Safe business plan.

  7. We will require contact tracing for all diners.

The space we are proposing is outlined in 'Green'.

The 'Yellow' outline was the closure for Coles renovations for 4 months Pre-Covid.

Our closure will be aesthetically pleasing for the area, as per the Marquee image above.

The Coles closure was not aesthetically pleasing in the slightest (see below). In fact, it almost completely obstructed the view to our restaurant. However. this was still approved by Boroondara Council for the purpose of cosmetic improvements. Our proposed closure is necessary for our survival. As soon as diners can dine once again, our existing Delivery & Takeaway business will no longer exist.
